Creamy Spicy Vodka Sauce

Ingredients
1 diced shallot
2 cloves of garlic, minced
1 can of tomato paste
2 tbsp vodka
1.5 cups heavy cream
a generous amount of red pepper flakes
1/2 cup grated Parmesan cheese
fresh basil
fresh oregano
peperoncino
half stick of unsalted butter
pasta of choice (recommendations: conchiglie (pronounced kon-kill-ee-ay a.k.a. shell pasta), penne, or Oddlietti!)
1/2 cup tears of the gods (a.k.a. pasta water — pasta water is starchy so it helps emulsify the sauce))
Pasta Instructions
1) salt your water
2) boil the water
3) add your pasta of choice and cook ‘til al dente
Sauce Instructions
1) add butter, the diced shallot, and the minced garlic to a pan and cook until they brown and caramelize (do not burn)
2) add the can of tomato paste and cook and stir until it darkens
3) add vodka and cook for 1-2 minutes until it evaporates
4) add a generous amount of red pepper flakes, some basil, oregano, and peperoncino until fragrant (make it as spicy as you want! the world is your spicy oyster!)
5) add heavy cream, grated Parmesan cheese, and pasta water and stir until the sauce thickens
6) drain and fold in the pasta
7) e buon appetito 😋
